The session opens with a smoked Old Fashioned — cherry-wood smoke that puts char in your nose before the lesson explains lignin or vanillin. Then a sensory experience with oak chips at three char levels (smell only).
The flight is built around what time and the barrel actually do — bourbons across different ages, char levels, and maturity styles, including one over-extracted age statement so you can experience what too much feels like. You’ll appreciate each one in sequence, with the barrel science alongside every pour. The class closes with a Unicorn reveal — an accessible craft bottle that proves perfectly mature doesn’t have to be expensive.
